  • 1 tsp Fennel Seed omit or replace with cumin if needed
  • 1 tsp Salt adjust to taste
  • 1 tbsp Fresh Sage
  • 1 tbsp Fresh Parsley
  • 1 large Egg can use a flax egg for vegan option
  • 1 cup Breadcrumbs gluten-free options are available
For the Glaze
  • 1 cup Apple Cider can substitute with apple juice
  • 1 tbsp Fresh Thyme or use dried thyme at one-third of the amount

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan, combine the apple cider and fresh thyme. Heat over high until boiling, then reduce to medium-low and simmer for about 20 minutes.
  3. In a large mixing bowl, combine ground pork, grated onion, diced apple, minced garlic, mustard, fennel seed, salt, sage, parsley, egg, and breadcrumbs. Mix gently until just combined.
  4. Form the mixture into uniform meatballs, about 1 to 1.5 inches in diameter, and place evenly on the prepared baking sheet.
  5. Bake the meatballs for 20 minutes until browned and cooked through, reaching an internal temperature of 160°F (71°C).
  6. Remove from the oven and pour the reduced cider glaze over the meatballs, tossing gently to coat.
  7. Serve warm with extra glaze drizzled on top, perfect for parties or snacks.
