Method
 

Cooking Instructions
  1. Wash one eggplant and cut it into cubes or slices. Sprinkle generously with salt and let rest in a colander for 15-30 minutes.
  2. Dice the red bell pepper into bite-sized pieces and slice spring onions into rings.
  3. Chop a handful of dates and walnuts, setting them aside.
  4. Heat oil in a large frying pan and sauté the salted eggplant for 5-7 minutes until soft and golden brown.
  5. Incorporate the diced red pepper and spring onions into the pan, sauté for an additional 3-4 minutes.
  6. Stir in chili flakes, cumin, and cinnamon, mixing for about 1 minute.
  7. Add chopped dates, walnuts, tomato purée, lemon juice, and season with salt and pepper. Mix well.
  8. Lower heat and simmer for 10-15 minutes.
  9. Serve hot, garnished as desired.
