  • 8 slices bacon Pancetta or turkey bacon can be used.
  • 2 medium onions Thinly sliced.
  • 2 tablespoons olive oil For sautéing onions.
  • 8 slices cheese Cheddar or Gruyère recommended.
  • 4 tablespoons unsalted butter For grilling.
  • salt To taste.
  • pepper To taste.
For Extra Flavor (Optional)
  • hot sauce For added spice.
  • herbs Fresh thyme or basil.

Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add the sliced onions with salt and pepper. Sauté for about 15 minutes until golden brown.
  2. Remove the onions and in the same skillet, cook the bacon over medium heat for 5-7 minutes until crispy.
  3. Assemble sandwiches with bread, cheese, bacon, caramelized onions, and another slice of cheese, then top with remaining bread.
  4. Butter the outside of each sandwich evenly and preheat the skillet.
  5. Grill the sandwiches for about 4-5 minutes on each side until golden brown.
  6. Serve warm, letting them cool for a minute before slicing in half.
