- Preheat your oven to 375°F (190°C).
- Lightly grease a 9-inch pie dish or an 8x8-inch baking dish with cooking spray or a drizzle of olive oil.
- In a food processor, pulse 1 cup of cottage cheese until it becomes smooth and creamy in texture.
- In a medium bowl, crack 4 large eggs and whisk them well until they are fluffy. Fold in the blended cottage cheese, along with 1/4 cup of grated Parmesan cheese, 2 tablespoons of finely chopped chives, and seasonings.
- If desired, fold in any optional add-ins like 1/4 cup of bell peppers, spinach, or sun-dried tomatoes.
- Carefully pour the prepared egg and cottage cheese mixture into the greased baking dish. Smooth the top with a spatula.
