Preparation Steps
- Preheat your oven to 400°F (200°C). Wash the baby potatoes thoroughly and cut them in half or quarters.
- In a large baking dish, combine the halved baby potatoes, cherry tomatoes, minced garlic, and olive oil. Sprinkle oregano, black pepper, and salt. Toss until well coated.
- Create a small space in the center of the dish and nestle the block of feta cheese. Drizzle more olive oil over the feta.
- Bake in the preheated oven for 35-40 minutes. Stir halfway through baking for even roasting. It's done when potatoes are golden and tomatoes burst.
- Remove from oven and stir the feta gently into the mixture until it creates a creamy sauce. Garnish with chopped basil or parsley.
- Serve warm, or refrigerate leftovers for meal prep.
