  • 1 pound Fresh Salmon cubed, sashimi-grade
  • 2 tablespoons Light Soy Sauce gluten-free option available
  • 2 tablespoons Kewpie Mayo or regular mayo
  • 1 tablespoon Sriracha adjust to taste
  • 1 teaspoon Sesame Oil use sparingly
For the Sushi Base
  • 1 cup Uncooked Sushi Rice short-grain rice
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon White Sugar can be replaced with honey
  • 4 sheets Nori Sheets cut into squares
For Garnishing
  • 1 tablespoon Furikake optional
  • 2 tablespoons Green Onion finely chopped
  • 1 release Cooking Spray for muffin tins

Method
 

Step-by-Step Instructions
  1. Cook the sushi rice according to package instructions, rinsing and simmering. Mix rice vinegar and sugar until dissolved and combine with warm rice.
  2. Preheat oven to 400°F. In a bowl, mix salmon with soy sauce, mayo, sriracha, and sesame oil until coated.
  3. Spray muffin tins with cooking spray. Cut nori into squares and place in tins to form cups.
  4. Press sushi rice into nori cups, followed by a layer of salmon mixture.
  5. Bake for approximately 15 minutes until salmon is cooked and nori is crispy.
  6. Cool briefly, then garnish with sriracha, furikake, and green onions.
