Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather and prepare your ingredients.
  2. Grease the bottom and sides of a 9x13 inch baking dish with butter.
  3. Combine sliced zucchini, chopped spinach, and minced garlic in a mixing bowl. Toss with olive oil.
  4. In another bowl, whisk together ricotta, eggs, and feta until smooth. Stir in oregano, basil, salt, and pepper.
  5. Spread half of the zucchini and spinach mixture into the greased baking dish.
  6. Dollop half of the cheese mixture over the vegetable layer, spreading evenly.
  7. Repeat with the remaining zucchini and spinach mixture, followed by the remaining cheese mixture.
  8. Combine breadcrumbs and Parmesan cheese in a small bowl. Sprinkle over the top of the casserole.
  9. Bake for 35–40 minutes until golden brown and bubbling.
  10. Allow to cool for a few minutes before serving.
