- Preheat your oven to 375°F (190°C). Gather and prepare your ingredients.
- Grease the bottom and sides of a 9x13 inch baking dish with butter.
- Combine sliced zucchini, chopped spinach, and minced garlic in a mixing bowl. Toss with olive oil.
- In another bowl, whisk together ricotta, eggs, and feta until smooth. Stir in oregano, basil, salt, and pepper.
- Spread half of the zucchini and spinach mixture into the greased baking dish.
- Dollop half of the cheese mixture over the vegetable layer, spreading evenly.
- Repeat with the remaining zucchini and spinach mixture, followed by the remaining cheese mixture.
- Combine breadcrumbs and Parmesan cheese in a small bowl. Sprinkle over the top of the casserole.
- Bake for 35–40 minutes until golden brown and bubbling.
- Allow to cool for a few minutes before serving.
