Step-by-Step Instructions
  1. Preheat your oven to 200°C (375°F).
  2. In a large roasting pan, combine mushrooms with olive oil, salt, pepper, and thyme. Toss gently.
  3. Add minced and smashed garlic, mixing well before roasting.
  4. Roast mushrooms for about 35 minutes, tossing halfway through.
  5. Remove from oven, transfer to a bowl, and mix in balsamic vinegar and additional olive oil.
  6. Let the mushrooms cool and marinate at room temperature for about 2 hours.
  7. Serve at room temperature or slightly warm.
