Preparation Steps
  1. In a large mixing bowl, combine cornstarch, salt, black pepper, garlic powder, and paprika. Stir until evenly mixed.
  2. Cut chicken into bite-sized pieces and coat each piece with the cornstarch mixture.
  3. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  4. Add coated chicken pieces to the hot oil and fry for 5-7 minutes until golden brown.
  5. In a separate bowl, whisk together mayonnaise, sweet chili sauce, and sriracha until smooth.
  6. Assemble the bowls by placing jasmine rice at the bottom, followed by crispy chicken and fresh veggies.
  7. Drizzle the spicy mayo sauce over the chicken and veggies, then serve immediately.
