  • 1 large red onion can switch with yellow onion
  • 1 teaspoon smoked paprika optional but recommended
  • 1 cup cheddar cheese alternatives include pepper jack or dairy-free
  • 1 tablespoon olive oil can swap with avocado oil
  • to taste salt & pepper essential seasonings
  • 2 tablespoons green onions for garnish, chives can be substituted

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 2 cups of diced sweet potatoes, seasoning them with salt and pepper. Sauté for about 10-12 minutes until tender and lightly browned.
  2. Stir in 1 diced red onion and 1 cup of corn into the skillet. Continue to sauté for an additional 5 minutes until the onions become translucent.
  3. Add 2 cups of shredded cooked chicken and 1/2 cup of BBQ sauce to the skillet. Stir and heat for about 3-5 minutes until warmed through.
  4. Sprinkle 1 cup of shredded cheddar cheese on top. Cover and reduce heat to low, allowing it to melt for 2-3 minutes.
  5. Remove from heat and sprinkle chopped green onions on top. Serve hot.
