Step-by-Step Instructions
  1. Begin by cleaning and deveining the prawns if they have not been prepped. Rinse under cold water and pat dry.
  2. In a small saucepan, heat the olive oil over medium-low heat. Add minced garlic and sauté until golden brown, about 2-3 minutes. Stir in chopped chili, lemon zest, and juice, then simmer for another minute.
  3. Pour the garlic-lemon sauce over the cleaned prawns in a large bowl, toss to coat, and let marinate for about 15 minutes at room temperature.
  4. Preheat grill to high heat (around 280°C or 550°F) ensuring the grates are clean and lightly oiled.
  5. Grill the marinated prawns directly on the grill grates for 2-4 minutes on each side until shells are pinky-orange and prawns are opaque.
  6. Remove grilled prawns from the grill, transfer to a serving platter, and garnish with extra lemon wedges. Serve hot.
