- Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
- In a stand mixer, cream together softened unsalted butter and sugar until light and fluffy (about 3 minutes).
- Add one egg and vanilla extract to the mixture, and mix until well combined (1-2 minutes).
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture, mixing until a soft dough forms.
- Using an ice cream scoop, portion the dough and roll into balls. Optionally roll in sugar for additional crunch.
