Step-by-Step Instructions
  1. Slice one medium onion and place the slices at the bottom of your slow cooker.
  2. Lay a 2-pound beef roast atop the onions, pressing down slightly and seasoning with salt and pepper.
  3. Pour in 2 cups of beef broth, followed by 2 tablespoons of Worcestershire sauce and 1 tablespoon of soy sauce.
  4. Sprinkle 1 teaspoon each of garlic powder, onion powder, dried thyme, and more salt and pepper.
  5. Cover and cook on LOW for 8 hours or HIGH for 4 to 5 hours until fork-tender.
  6. Carefully remove the roast and shred the beef using two forks.
  7. Strain the onions from the broth, returning only the liquid.
  8. Mix 2 tablespoons of cornstarch with 2 tablespoons of cold water, then stir into the broth and heat on HIGH until thickened.
  9. Serve layered with bread, mashed potatoes, shredded beef, and gravy.
