- Cool the beef at room temperature for 30 minutes, then refrigerate wrapped in plastic for at least 2 hours.
- Prepare the dressing by simmering cooking sake and mirin, then mix in rice vinegar, soy sauce, and yuzu after cooling.
- Make garlic oil by simmering minced garlic in oil for 5 minutes, then strain out garlic chips.
- Thinly slice the beef and arrange on a plate. Drizzle with dressing and garlic oil, then garnish with crispy toppings.
