Ingredients
  

For the Chicken
  • 1 pound Chicken Breast or thighs for richer flavor
  • to taste Salt
  • to taste Pepper
For the Sauce
  • 2 tablespoons Olive Oil for browning
  • 1 medium Onion finely chopped
  • 3 cloves Garlic minced
  • 1 teaspoon Ground Cumin preferably fresh
  • 1 teaspoon Paprika adjust for heat level
  • to taste Cayenne Pepper optional
For the Creamy Base
  • 1 can Coconut Milk for richness
  • 1 can Diced Tomatoes drained
  • 1 tablespoon Lime Juice fresh
  • 1/4 cup Fresh Cilantro chopped
For Serving
  • 4 cups Steamed Rice jasmine or basmati is recommended

Method
 

Cooking Steps
  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Sauté the chopped onion for 3-4 minutes until translucent.
  3. Stir in minced garlic, cumin, paprika, and cayenne pepper. Cook for another minute.
  4. Add the cubed chicken breast and cook for 5-7 minutes until browned.
  5. Season the chicken with salt and pepper to taste.
  6. Pour in the coconut milk and bring to a simmer for 5 minutes.
  7. Stir in the diced tomatoes and lime juice, and simmer for another 5 minutes.
  8. Reduce heat to low, cover, and let it simmer for 15-20 minutes.
  9. Stir in chopped cilantro and adjust seasoning if necessary.
  10. Serve hot over steamed rice, garnished with additional cilantro and lime wedges if desired.
