- In a mixing bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil. Stir until the sugar dissolves, then add the ground beef, coating it thoroughly. Marinate in the refrigerator for at least 1 hour.
- After marinating, remove beef and divide it into four portions. Shape each into a burger patty, slightly larger than the buns and ¾ inch thick.
- Preheat the grill to medium-high heat (375°F to 450°F) and lightly oil the grates.
- Place patties over direct heat and grill for 4-5 minutes without moving. Flip and grill for 4-5 more minutes until internal temperature reaches 160°F.
- Toast the burger buns on the grill for 1-2 minutes until golden brown.
- Assemble the burgers with a patty on each bun, topped with kimchi, lettuce, tomato, and cheese if desired. Top with the other half of the bun.
