- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, blend together 8 oz of softened cream cheese, 1/4 cup of granulated sugar, 1 tablespoon of lemon juice, 1 teaspoon of vanilla extract, and 1 egg yolk until smooth.
- Unroll the puff pastry on a lightly floured surface, roll out gently, cut into 8 equal squares, score a border, and prick the center with a fork.
- Place the squares on the baking sheet, spoon the cream cheese filling in the center of each, and add a dollop of fruit jam on top.
- Beat one egg to create an egg wash and brush the edges of each pastry square, then sprinkle with coarse sugar if desired.
- Bake the pastries for 15-18 minutes or until golden brown and puffed.
