Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, blend together 8 oz of softened cream cheese, 1/4 cup of granulated sugar, 1 tablespoon of lemon juice, 1 teaspoon of vanilla extract, and 1 egg yolk until smooth.
  3. Unroll the puff pastry on a lightly floured surface, roll out gently, cut into 8 equal squares, score a border, and prick the center with a fork.
  4. Place the squares on the baking sheet, spoon the cream cheese filling in the center of each, and add a dollop of fruit jam on top.
  5. Beat one egg to create an egg wash and brush the edges of each pastry square, then sprinkle with coarse sugar if desired.
  6. Bake the pastries for 15-18 minutes or until golden brown and puffed.
  7. Let them cool for about 5 minutes, then whisk powdered sugar, milk, and vanilla extract for the glaze and drizzle it over the pastries.
