  • 8 oz Imitation Crab Meat
  • 1 large Avocado ripe
  • 2 stalks Green Onions both white and green parts
For the Dressing
  • 3 Tbsp Rice Vinegar
  • 2 Tbsp Soy Sauce gluten-free if necessary
  • 1 Tbsp Sesame Oil or olive oil
  • 1 tsp Sugar omit for lower-sugar version
For Garnish
  • 2 Tbsp Sesame Seeds optional
  • Salt to taste
  • Pepper to taste

Method
 

Step‑by‑Step Instructions
  1. Slice the cucumber into thin rounds, about ⅛ inch thick.
  2. Dice the avocado into bite-sized cubes.
  3. Chop the green onions, using both white and green parts.
  4. In a large bowl, combine cucumbers, avocado, crab meat, and green onions. Toss gently.
  5. In a separate bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, salt, and pepper.
  6. Pour the dressing over the salad and toss gently.
  7. Sprinkle sesame seeds on top and chill for at least 15 minutes.
  8. Serve in individual bowls or on a platter.
