Step-by-Step Instructions
  1. Wash and dry an English cucumber. Slice the cucumber very thinly (about 1/8-inch thickness) using a mandolin or sharp knife.
  2. In a large bowl, combine sliced cucumbers, 8 ounces of chopped imitation crab meat, and three sliced green onions.
  3. Pour in 1 tablespoon of soy sauce and 2 tablespoons of spicy mayo. Season with kosher salt and pepper to taste.
  4. Shake the bowl tightly for about 30 seconds to evenly distribute the flavors.
  5. Slice one avocado into thin wedges and place it on top of the salad. Optionally, drizzle more spicy mayo or add garnishes.
  6. Serve immediately or refrigerate for 15-30 minutes to chill slightly.
