Ingredients
  

Crust
  • 1 can nonstick cooking spray Prevents sticking
  • 26 pieces Oreos Crushed for crust
  • 4 Tbsp. butter, melted Can substitute with coconut oil
  • 1 pinch kosher salt Enhances flavor
  • 1 cup crushed Oreos Can also use graham crackers
Cheesecake Filling
  • 4 8 oz blocks of cream cheese, softened Main ingredient
  • 1 cup granulated sugar Adjust for sweetness
  • 3 large eggs Room temperature
  • 1 tsp. pure vanilla extract
  • 1/4 cup sour cream Greek yogurt can be used
  • 2 Tbsp. all-purpose flour Can substitute with gluten-free flour
  • 1/4 tsp. kosher salt
White Chocolate Mixture
  • 1 1/2 cups white chocolate chips High-quality recommended
  • 1 tsp. coconut oil For melting chocolate
  • orange food coloring Optional for color
Ganache & Topping
  • 1/3 cup heavy cream Full-fat preferred
  • 1 cup semisweet chocolate chips Can substitute with dark chocolate
  • 10 medium strawberries For decoration
  • 1/2 package Robin's Eggs Optional garnish

Method
 

Preparation Steps
  1. Preheat the oven to 325°F (160°C) and prepare a 9-inch springform pan with nonstick spray.
  2. Crush 26 Oreos and mix with melted butter and kosher salt. Press into the bottom of the pan.
  3. Beat 4 blocks of cream cheese with sugar until smooth, then add eggs one at a time.
  4. Mix in vanilla, sour cream, flour, and salt until creamy.
  5. Melt white chocolate chips with coconut oil until smooth, then fold into the cream cheese mixture.
  6. Add food coloring if desired and mix until well incorporated.
  7. Pour batter over crust, smooth top, and bake for 1 hour until edges are set.
  8. Let cool in the oven for 1 hour, then refrigerate for at least 8 hours.
  9. Heat heavy cream until simmering, then add chocolate chips and stir until smooth.
  10. Decorate cheesecake with strawberries and drizzle ganache on top before serving.
