  • 1.75 cups buttermilk substitute by adding 2 tsp lemon juice or vinegar to 1 ¾ cups milk

Step-by-Step Instructions for Cheddar and Herb Soda Bread
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine 4 cups of all-purpose flour, 1 ½ teaspoons of baking soda, and 1 teaspoon of salt. Whisk thoroughly.
  3. Add in the chopped fresh chives, thyme, rosemary, and sage, along with 1 cup of shredded cheddar cheese. Stir gently to combine.
  4. Pour 1 ¾ cups of buttermilk into the mixture. Stir until just combined.
  5. Knead the dough gently about 5-7 times and shape into a round loaf approximately 7 inches in diameter.
  6. Transfer the dough onto a floured baking sheet and score a deep cross into the top, about ½ inch deep.
  7. Bake for 15 minutes at 425°F, then reduce to 375°F (190°C) and bake for an additional 30-35 minutes.
  8. Remove from the oven, wrap in a tea towel, and cool completely before slicing.
