Step-by-Step Instructions for Cheddar and Herb Soda Bread
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine 4 cups of all-purpose flour, 1 ½ teaspoons of baking soda, and 1 teaspoon of salt. Whisk thoroughly.
- Add in the chopped fresh chives, thyme, rosemary, and sage, along with 1 cup of shredded cheddar cheese. Stir gently to combine.
- Pour 1 ¾ cups of buttermilk into the mixture. Stir until just combined.
- Knead the dough gently about 5-7 times and shape into a round loaf approximately 7 inches in diameter.
- Transfer the dough onto a floured baking sheet and score a deep cross into the top, about ½ inch deep.
- Bake for 15 minutes at 425°F, then reduce to 375°F (190°C) and bake for an additional 30-35 minutes.
- Remove from the oven, wrap in a tea towel, and cool completely before slicing.

Notes
Avoid over-kneading the dough to ensure a tender loaf. Allow cooling wrapped in a tea towel to soften the crust.
