Preparation
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay out the flour tortillas and layer them with slices of roast beef and shredded mozzarella or provolone cheese.
- Roll up each tortilla tightly from the bottom, folding the sides inward as you go, and place seam-side down on the baking sheet.
- Brush the tops with melted butter and sprinkle with garlic powder, onion powder, and dried parsley.
- Bake the roll-ups for 12-15 minutes until golden brown and the cheese is bubbling.
- While baking, combine beef broth, Worcestershire sauce, soy sauce, and a pinch of salt and pepper in a saucepan, and bring to a simmer for 5-7 minutes.
- Once baked, cut the roll-ups in half and serve with the hot au jus for dipping.
