Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat.
  2. Add 2 cups of cubed Yukon gold potatoes and sauté for 5-6 minutes until golden brown.
  3. Push the potatoes to one side and add 1 pound of lean ground beef, crumbling as it cooks. Add 1 chopped yellow onion and 1 diced red bell pepper.
  4. Season with kosher salt and pepper and cook for 6-8 minutes until beef is browned and vegetables are softened.
  5. Stir in 1 can of diced green chiles, 1 tablespoon of chili powder, 1 teaspoon of ground cumin, and 1 teaspoon of smoked paprika.
  6. Continue cooking for 5-10 minutes, stirring until potatoes are tender and flavors meld.
  7. Sprinkle 1-2 cups of shredded cheese on top, cover, and cook for 1 minute until melted.
  8. Garnish with chopped cilantro before serving warm.
