For the Tortillas
  • 8 pieces Tortillas Corn or flour work well.
For the Topping
  • 2 cups Shredded Cheese Mix varieties like cheddar and Monterey Jack.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Add a splash of oil and sauté the chopped onion for 3-4 minutes until translucent.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Incorporate your choice of ground meat and brown for 5-7 minutes.
  5. Sprinkle taco seasoning and add a splash of water, simmer for 2-3 minutes.
  6. Combine the meat mixture with black beans, sweet corn, and diced tomatoes in a large bowl.
  7. Arrange tortillas upright in a baking dish.
  8. Fill each tortilla with the meat and bean mixture generously.
  9. Sprinkle shredded cheese on top of each filled tortilla.
  10. Cover the dish with foil and bake for 15 minutes.
  11. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  12. Let cool for a few minutes before serving.
