Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine mashed bananas, melted butter, and brown sugar until smooth.
  3. Whisk in egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Chill the dough in the refrigerator for 20-30 minutes.
  7. Scoop dough onto prepared baking sheets, leaving space between each scoop.
  8. Bake for 11-13 minutes, or until the edges are golden and centers are soft.
  9. Let the cookies cool on the baking sheets for 10 minutes before transferring to a wire rack.
