  • 4 pieces Chicken Thighs Skin-on, bone-in
  • 2 tablespoons Vegetable Oil For browning
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Italian Seasoning Or dried oregano/thyme
For the Sauce
  • 8 ounces White Mushrooms Sliced
  • 6 slices Bacon Thick-cut
  • 1 cup Heavy Cream Coconut cream for dairy-free
  • 2 teaspoons Fresh Thyme Or dried thyme in smaller amounts

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. Season the chicken thighs with salt, pepper, and Italian seasoning.
  3. In a skillet, heat vegetable oil and brown the chicken thighs skin-side down for about 5 minutes.
  4. Transfer the chicken to a baking sheet skin-side up and bake for approximately 20 minutes or until internal temperature reaches 165°F (75°C).
  5. Sauté sliced mushrooms in the same skillet for about 3 minutes.
  6. Stir in cooked bacon, heavy cream, and fresh thyme, bring to a boil, then reduce to simmer for about 2 minutes.
  7. Return chicken to the skillet and spoon the sauce over, serve immediately.
