Preparation Steps
- Preheat your oven to 350°F (175°C).
- Season the chicken thighs with salt, pepper, and Italian seasoning.
- In a skillet, heat vegetable oil and brown the chicken thighs skin-side down for about 5 minutes.
- Transfer the chicken to a baking sheet skin-side up and bake for approximately 20 minutes or until internal temperature reaches 165°F (75°C).
- Sauté sliced mushrooms in the same skillet for about 3 minutes.
- Stir in cooked bacon, heavy cream, and fresh thyme, bring to a boil, then reduce to simmer for about 2 minutes.
- Return chicken to the skillet and spoon the sauce over, serve immediately.
