Ingredients
  

For the Steak Marinade
  • 1 pound Flank Steak or Skirt Steak Can substitute with chicken thighs
  • 1/4 cup Fresh Lime Juice Lemon juice can work if needed
  • 2 tablespoons Olive Oil Avocado oil can be used as an alternative
  • 2 cloves Garlic (minced) Fresh is best, garlic powder is a backup
  • 1/4 cup Fresh Cilantro (chopped) Substitute parsley if needed
  • 1 teaspoon Ground Cumin Can swap with chili powder
  • 1 teaspoon Chili Powder Paprika can be used for milder flavor
  • 1 teaspoon Salt No direct substitutes
  • 1/2 teaspoon Black Pepper Freshly ground preferred
  • 1 teaspoon Smoked Paprika Regular paprika can be substituted
For the Bowl Components
  • 2 cups Cooked White Rice Cauliflower rice can be a low-carb option
  • 1 can Black Beans Can substitute with pinto beans
  • 1 cup Corn Frozen or canned corn works
  • 1 medium Avocado (sliced) Guacamole can be used as an alternative
  • 1/2 cup Red Onion (thinly sliced) Green onions are a milder option
  • 1 cup Cherry Tomatoes (halved) Any small tomato variety works
  • 1 cup Shredded Cheese Choose your favorite or omit for dairy-free
  • 1/2 cup Pico de Gallo or Salsa Use your favorite blend
  • 1/2 cup Sour Cream or Greek Yogurt Non-dairy yogurt as a substitute

Method
 

Prepare Marinade
  1. In a medium bowl, whisk together fresh lime juice, olive oil, minced garlic, chopped cilantro, ground cumin, chili powder, salt, black pepper, and smoked paprika until well combined.
Marinate Steak
  1. Place your flank or skirt steak in a zip-top bag, pouring the marinade over the meat and seal.
Cook Rice
  1. Prepare your rice according to package instructions. Once done, stir in fresh lime juice, chopped cilantro, and a pinch of salt.
Warm Black Beans
  1. In a small saucepan over medium heat, combine black beans with water, ground cumin, and salt. Stir and heat for about 5 minutes.
Char Corn
  1. Heat a dry skillet over medium-high heat, add corn, and sear until slightly browned, about 3-5 minutes.
Sear Steak
  1. Pat dry the marinated steak and heat a skillet over high. Sear for about 3-4 minutes per side until medium-rare.
Slice Steak
  1. Slice the steak thinly against the grain using a sharp knife after resting for 10 minutes.
Assemble Bowls
  1. In a serving bowl, layer cilantro lime rice, warmed black beans, charred corn, sliced steak, avocado, red onion, cherry tomatoes, shredded cheese, and pico de gallo.
