Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, and cinnamon. If using, add honey or maple syrup. Sprinkle in the baking powder and a pinch of salt.
  3. Let the mixture sit for about 5 minutes to absorb moisture.
  4. Fill each cup of the mini muffin pan about three-quarters full with the mixture.
  5. Bake for 18-20 minutes or until the tops are set and golden brown.
  6. Allow to cool in the pan for about 5 minutes, then transfer to a wire rack.
  7. Once cool, enjoy or store in an airtight container in the fridge for up to 4 days.
