Peach Filling
  • 4 cups Fresh Peaches, sliced Can substitute with drained canned peaches.
  • 1/2 cup Brown Sugar Use dark brown sugar for richer flavor.
  • 1/4 cup Granulated Sugar
  • 2 tablespoons Corn Starch Can substitute with all-purpose flour.
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Kosher Salt Can substitute with sea salt.
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Cardamom Optional but recommended for flavor.
  • 1 tablespoon Lemon Juice
Topping
  • 1 package Cinnamon Rolls Store-bought raw cinnamon rolls.
  • 1/4 cup Unsalted Butter, cubed For dotting on top.
  • 1/2 cup Pecans, toasted (optional) Omit for nut-free version.
Frosting
  • 1 cup Cream Cheese Frosting Can replace with vanilla ice cream.

Preparation
  1. In a large mixing bowl, combine sliced peaches with brown sugar, granulated sugar, corn starch, vanilla extract, cinnamon, salt, nutmeg, cardamom, and lemon juice. Gently stir until peaches are coated. Set aside to let flavors meld.
  2. Preheat your oven to 350°F (175°C) and grease a 9-inch skillet or baking dish with butter. Pour the peach mixture into the prepared skillet.
  3. Cut each cinnamon roll into small cubes. Scatter over the peach mixture, ensuring coverage. Dot with unsalted butter and sprinkle with optional pecans.
  4. Bake for 40–45 minutes until rolls are golden brown and peach filling bubbles.
  5. Prepare the cream cheese frosting by beating together cream cheese and butter, then adding powdered sugar and vanilla until smooth and fluffy.
  6. Allow the cobbler to cool slightly, then drizzle with frosting before serving or serve with vanilla ice cream.
