Step-by-Step Instructions
  1. In a mixing bowl, combine 2 cups of ricotta cheese, 1 cup of powdered sugar, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and ½ cup of mini chocolate chips. Blend together until smooth and creamy.
  2. Preheat your oven to 375°F (190°C) and prepare your baking dish by greasing a 9x9-inch baking dish or lining it with parchment paper.
  3. Unroll the first pre-made pie crust and gently press it into the bottom of your prepared baking dish, smoothing out any air pockets.
  4. Spoon the creamy filling onto the pie crust, spreading it out evenly with a spatula, leaving a small border at the edges.
  5. Roll out the second pie crust and place it over the filling. Seal the edges and brush the top with a beaten egg.
  6. Bake for 30-35 minutes until the crust is golden brown. Monitor closely to achieve the right color.
  7. Allow to cool for at least 30 minutes before slicing into squares and serving with garnishes if desired.
