Coconut Shrimp
  • 1 lb Large Shrimp Peeled and deveined, 21-25 count
  • 1/4 cup All-Purpose Flour Or substitute with cornstarch for gluten-free
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
  • 2 Large Eggs Beaten well
  • 1 1/2 cups Sweetened Shredded Coconut Recommended: Baker’s brand
  • 1/2 cup Panko Breadcrumbs For extra crunch
  • Light Olive Oil Used for frying (about 1/4 inch deep)
Dipping Sauce
  • 1/4 cup Sweet Chili Sauce
  • 1/4 cup Apricot Preserves

Method
 

Preparation Steps
  1. Rinse the shrimp in cold water and pat dry with paper towels.
  2. Create a breading station with flour mixture, beaten eggs, and coconut-panko mixture in three shallow bowls.
  3. Dredge shrimp in flour mixture, then dip in egg, and finally coat in coconut-panko.
  4. Heat light olive oil in a large skillet over medium heat until it reaches 350°F.
  5. Fry shrimp for about 2 minutes on each side or until golden brown.
  6. Remove shrimp and drain excess oil on paper towels.
  7. Mix sweet chili sauce and apricot preserves together in a small bowl.
  8. Serve shrimp hot with lime wedges.
