  • 1 cup Water balances flavor and consistency
  • 1 lime Juice can substitute lemon juice
For the Soup Base
  • 2 tablespoons Grated Fresh Ginger or substitute with ½ teaspoon ground ginger
  • 2 cloves Garlic minced; fresh preferred
  • 2 tablespoons Thai Red Curry Paste adjust based on spice preference
  • 1 can Full-Fat Coconut Milk can use light coconut milk
For the Noodles and Protein
  • 8 ounces Uncooked Rice Noodles or shirataki noodles for low-carb
  • 2 cups Shredded Cooked Chicken rotisserie chicken recommended
For the Garnish
  • Fresh Basil & Cilantro to taste
  • 1/4 cup Chopped Scallions can replace with chives
  • Salt & Pepper to taste; soy sauce for umami
  • Lime Wedges optional for serving

Step-by-Step Instructions
  1. Heat olive oil in a large pot. Add onion and sauté for 5 minutes until translucent.
  2. Stir in ginger and garlic, cooking for 30 seconds. Add curry paste and mix.
  3. Pour in broth and water, add lime juice, and bring to a gentle boil.
  4. Add rice noodles, reduce heat, and cook for 5 minutes until tender.
  5. Stir in coconut milk and shredded chicken, simmer for 10 minutes.
  6. Fold in basil and cilantro, season with salt and pepper.
  7. Serve hot, garnished with lime wedges and herbs.
