For the Vinaigrette
  • 3 tablespoons Olive Oil Use flavored oils for a unique twist.
  • 2 tablespoons Vinegar Apple cider vinegar or balsamic recommended.
  • to taste Salt and Pepper Add lemon juice for enhanced freshness.

Method
 

Preparation
  1. Drain and rinse one can of chickpeas under cold water for about 30 seconds.
  2. Chop half a cucumber into bite-sized pieces and thinly slice a small red onion.
  3. Set aside all the ingredients for easy access.
Combine Salad Ingredients
  1. In a large mixing bowl, add the prepared cottage cheese, chickpeas, cucumbers, and red onion. Gently fold the ingredients together.
Whisk Together the Vinaigrette
  1. In a small bowl, whisk together olive oil, vinegar, and a pinch of salt and pepper.
