Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat, sauté diced onion and bell pepper for 3-4 minutes until softened. Add spinach, cooking until wilted.
  3. In a bowl, whisk together eggs, milk, cottage cheese, and Italian seasoning. Add salt and pepper to taste.
  4. Fold the sautéed vegetables into the egg mixture along with shredded cheese.
  5. Lightly grease a 9-inch pie dish, pour in the quiche mixture, smoothing out the top.
  6. Bake for 40-45 minutes until golden and set in the center.
  7. Cool for 5-10 minutes before serving.
