Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. Mash 2-3 ripe bananas thoroughly in a mixing bowl.
  3. Add 1 cup of cottage cheese, 2 eggs, 1/3 cup of maple syrup, and 1 teaspoon of vanilla extract to the mashed bananas and whisk until combined.
  4. In a separate bowl, whisk together 1 ½ cups of almond flour, 1 teaspoon of baking soda, and 1 teaspoon of cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
