Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add 1 pound of beef or lamb, searing it for about 4-5 minutes on each side until browned. Remove and set aside.
  2. In the same pot, reduce heat to medium and add one chopped onion and 3 minced garlic cloves. Sauté for 3-4 minutes until onions are soft and translucent.
  3. Add 2 tablespoons of tomato paste, stirring and cooking for about 1 minute. Then pour in a 28-ounce can of crushed tomatoes and a splash of water or broth, stirring until well combined.
  4. Return the browned meat, season with 1 bay leaf, a pinch of cinnamon, salt, and pepper. Cover and simmer for 25-30 minutes.
  5. Once meat is tender, stir in 1 cup of orzo. Cook uncovered for about 10 minutes over medium heat, stirring frequently.
  6. Remove from heat, discard the bay leaf, and serve with fresh parsley on top.
