For the Noodles and Sauce
  • 8 ounces Egg Noodles whole wheat or gluten-free alternatives
  • 2 cups Beef Broth or vegetable broth
  • 1 cup Sour Cream or Greek yogurt for extra protein
  • 10.5 ounces Cream of Mushroom Soup homemade or vegan alternatives
  • 1 cup Mozzarella Cheese can use cheddar or dairy-free cheese

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined and form meatballs about 1 to 1.5 inches in diameter.
  3. Heat a skillet over medium heat and brown the meatballs for about 5-7 minutes, turning occasionally until evenly browned.
  4. Cook the egg noodles according to package instructions until al dente, typically 7-9 minutes. Drain and set aside.
  5. In a separate bowl, mix together the beef broth, sour cream, and cream of mushroom soup until smooth.
  6. In a large baking dish, combine the cooked egg noodles, browned meatballs, and sauce mixture. Stir gently to coat everything well.
  7. Sprinkle mozzarella cheese over the top of the mixture.
  8. Bake for 25-30 minutes, or until cheese is bubbly and lightly golden.
