  • 1/2 cup Mini Chocolate Chips Dark chocolate for richer taste

Method
 

Preparation
  1. Beat 8 oz of softened cream cheese with 1 tsp of mint extract for about 2 minutes until smooth.
  2. Gradually sift in 2 cups of powdered sugar, mixing on low speed for about 1 minute.
  3. If desired, add a few drops of green food coloring and mix on low speed for 30 seconds.
  4. Gently fold in 8 oz of whipped topping with a spatula, aiming for a light and airy texture.
  5. Stir in 1/2 cup of mini chocolate chips and 1/2 cup of chopped Andes mints.
  6. Serve immediately with fresh strawberries or chill for 30 minutes for firmer consistency.
