  • 2 tbsp Tomato paste Can substitute with crushed tomatoes.
  • 2 cloves Garlic Garlic powder can be a backup.
  • 1 tbsp Smoked paprika Regular paprika can be used if needed.
  • 1/2 tsp Freshly ground black pepper Adjust to taste.
  • 1 tbsp Sherry vinegar or red wine vinegar Apple cider vinegar is also suitable.
  • 1 cup Heavy cream Half-and-half or non-dairy alternatives can be used.
  • 2 tbsp Unsalted butter Olive oil is a good dairy-free substitute.
  • 1/4 cup Fresh parsley Other herbs like basil are acceptable.
  • 1/2 cup Parmesan (finely grated) Nutritional yeast is a great dairy-free alternative.

Method
 

Step-by-Step Instructions
  1. Cook the rigatoni in salted boiling water until very al dente, about 2 minutes less than package instructions. Reserve a cup of the pasta water and drain.
  2. Heat olive oil in a large pot over medium heat. Add the cooked chorizo and cook until browned, about 5-7 minutes.
  3. Stir in chopped onion and minced garlic. Sauté until onions are translucent, about 3-4 minutes.
  4. Add tomato paste, smoked paprika, and ground black pepper. Mix for 1-2 minutes, then add sherry vinegar and heavy cream.
  5. Fold the rigatoni into the sauce, adding reserved pasta water as needed for desired consistency. Stir for 1-2 minutes to combine.
  6. Remove from heat and stir in butter, parsley, and Parmesan until melted and well-blended. Adjust seasoning if necessary before serving.
