Method
 

Cooking Instructions

  3. Coat the chicken breasts in the flour cilantro mixture evenly.
  4. Heat coconut and olive oil in a skillet over medium heat until shimmering.
  5. Sear the chicken for 3-4 minutes on each side until golden brown.
  6. Sauté minced garlic in the skillet for about 30 seconds until fragrant.
  7. Whisk together coconut milk, chicken broth, brown sugar, and juice of one lime in a bowl.
  8. Pour the sauce over the chicken in the skillet and transfer to the oven.
  9. Bake for 10-15 minutes until chicken reaches an internal temperature of 165°F (74°C).
  10. Remove from the oven, drizzle remaining lime juice, and garnish with cilantro and green onions.
