  • 1 can whole kernel corn canned or frozen, drained
  • 1 can Rotel choose heat level
  • ¼ cup chopped green onions or substitute with red onion or chives
For the Creamy Dressing
  • ½ cup mayonnaise Greek yogurt can be used
  • ½ cup sour cream or use plain yogurt
For Extra Flavor
  • 1 cup shredded cheddar cheese Pepper Jack for additional heat or dairy-free for vegan

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions, about 8-10 minutes. Drain and rinse under cold water.
  2. In a large bowl, combine the drained corn, Rotel, and green onions. Stir gently until well combined.
  3. In a separate bowl, mix mayo and sour cream until smooth. Fold this dressing into the corn mixture.

  5. Add cooled pasta to the mixture and gently toss until well combined.
