Method
 

Ice Cream Making Steps
  1. Preheat your oven to 450°F (232°C). Rinse and trim the fresh figs, slicing them in half. Melt 2 tablespoons of unsalted butter and mix in an equal amount of honey. Drizzle this over the figs and place them on a parchment-lined baking sheet, cut side up.
  2. Bake the figs for about 10 minutes until tender and slightly caramelized.
  3. In a blender, combine the cooled figs, 1 cup of well-strained ricotta cheese, 2 cups of heavy cream, ¼ cup of honey, and a pinch of sea salt. Blend until ultra-smooth.
  4. Transfer the mixture to an airtight container and refrigerate for at least 4 hours to chill.
  5. Pour the chilled mixture into your ice cream maker and churn according to the manufacturer's instructions for about 20-25 minutes.
  6. Transfer the churned ice cream into an airtight container, smoothing the top. Freeze for about 4 hours until firm.
