For the Sauce
  • 1 cup Chicken Broth low-sodium option is recommended
  • 1 cup Heavy Cream or half-and-half for a lighter sauce
  • 2 tablespoons Fresh Lemon Juice bottled can be used if needed
  • 2 tablespoons Capers or olives as a substitute

Equipment

  • Mixing Bowl
  • Skillet
  • meat thermometer

Method

Preparation Steps
  1. In a mixing bowl, combine the chicken thighs with olive oil, garlic powder, lemon pepper seasoning, and dried parsley. Cover and marinate for at least 1 hour.
  2. In a large skillet, heat butter and olive oil over medium-high heat. Add the marinated chicken thighs skin-side down and cook for 3-4 minutes until browned. Flip and brown the other side for an additional 2-3 minutes.
  3. After browning, reduce heat to medium and add whole garlic cloves to the skillet. Sauté for 2-3 minutes until golden brown.
  4. Deglaze the skillet with chicken broth, then stir in heavy cream and fresh lemon juice. Simmer for 3-4 minutes until slightly thickened.
  5. Return the browned chicken to the skillet, spooning sauce over them. Cook uncovered on low heat for 15-20 minutes until chicken reaches an internal temperature of 165°F.
  6. Plate the chicken, drizzling the sauce over the top and serve with mashed potatoes, rice, or noodles.
