Ingredients
  

Crust
  • 1 cup Graham Cracker Crumbs whole-wheat for healthier choice
  • 2 tablespoons Granulated Sugar can substitute with coconut sugar
  • 4 tablespoons Unsalted Butter melted; can use coconut oil for dairy-free
Filling
  • 8 ounces Cream Cheese softened
  • 1 cup Powdered Sugar can substitute with erythritol
  • 1 teaspoon Vanilla Extract pure extract is best
  • 7 ounces Marshmallow Fluff store-bought
  • 1 cup Heavy Cream whipped; coconut cream for non-dairy
Topping
  • 3 ounces Marshmallow Fluff additional for topping
  • 1 cup Whipped Cream light and fluffy
  • Mini Marshmallows or Crushed Graham Crackers optional garnish

Method
 

Prepare the Cheesecake
  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan, ensuring an even layer. Chill the crust in the refrigerator for about 30 minutes to set.

  2. In a large mixing bowl, beat softened cream cheese and powdered sugar together until creamy and smooth, about 2-3 minutes. Add vanilla extract and marshmallow fluff, mixing until just integrated. Gently fold in the whipped cream using a spatula.

  3. Pour the creamy filling over the chilled crust and spread evenly. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight until firmly set.
