Ingredients
  

For the Pasta
  • 8 ounces penne pasta or rigatoni/fusilli
For the Sauce
  • 2 tablespoons olive oil or any cooking oil
  • 1 pound sweet Italian sausage or turkey sausage for a lighter option
  • 2-3 cloves garlic minced
  • 1 cup canned pumpkin purée or fresh cooked pumpkin
  • 1 cup chicken broth or vegetable broth
  • 1/4 cup heavy cream or coconut cream for dairy-free
  • 1/2 teaspoon ground nutmeg or a pinch of cinnamon
  • to taste salt & pepper
  • 1/2 cup grated Parmesan or nutritional yeast for vegan
For Serving
  • to taste chopped parsley optional topping
  • to taste red pepper flakes optional topping

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add penne pasta and cook until al dente, about 8-10 minutes. Reserve ½ cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add sausage, breaking it up, and brown for 5-7 minutes.
  3. Push sausage to the sides and add minced garlic to the center. Sauté for 1 minute until fragrant.
  4. Stir in pumpkin purée, chicken broth, and heavy cream. Add nutmeg and season with salt and pepper. Simmer for 5-7 minutes until thickened.
  5. Add drained pasta to skillet and toss to coat with sauce. Adjust consistency with reserved pasta water if needed. Stir in Parmesan cheese.
  6. Serve hot, garnished with additional Parmesan, parsley, and red pepper flakes.
