- In a mixing bowl, beat 8 oz of softened cream cheese and 1/2 cup of confectioners’ sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes. Gently fold in 1 cup of whipped topping until well combined.
- In a medium saucepan, combine 1 cup of chopped pecans, 1/2 cup of brown sugar, 1/4 cup of corn syrup, 4 tablespoons of butter, 1 egg, 1 teaspoon of vanilla extract, and a pinch of salt. Heat over medium-low, stirring continuously for about 3-5 minutes until the mixture thickens and is bubbly.
- Once the pecan mixture has thickened, remove it from the heat and allow it to cool for 10-15 minutes. Spread the cream cheese mixture evenly in a serving dish.
- When the pecan topping is slightly cooled, pour it over the cream cheese layer without mixing, allowing the beautiful layers to show through.
- Sprinkle additional chopped pecans over the top just before serving.
