Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering.
  2. Add 1 pound of diced chicken breasts, seasoning with salt and pepper. Sauté for about 5-7 minutes until golden brown.
  3. In the same skillet, add 1 diced onion and 2 minced garlic cloves. Cook for about 3-4 minutes until the onion is translucent.
  4. Add 1 cup of sliced pepperoncini peppers to the skillet. Cook for 2 more minutes until slightly tender.
  5. Pour in 1/2 cup of heavy cream and 1/2 cup of chicken broth, stirring continuously, and bring to a gentle simmer for about 5 minutes.
  6. Return the chicken to the skillet, stirring into the sauce. Cook together for another 2-3 minutes.
  7. Serve immediately over steamed rice, mashed potatoes, or your choice of side.
