  • 1 cup Pumpkin Puree canned or homemade
  • 1 cup Vegetable Broth low-sodium suggested
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh Sage or dried as an alternative
  • to taste Salt
  • to taste Pepper
For the Cheese Topping
  • 4 ounces Goat Cheese or fresh mozzarella/ricotta

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, sauté minced garlic in vegetable broth until fragrant. Stir in pumpkin puree and sage, then season with salt and pepper. Simmer for 5 minutes.
  3. In a large baking dish, combine the gnocchi and pumpkin sauce, stirring gently to coat the gnocchi.
  4. Drop spoonfuls of goat cheese over the top of the gnocchi mixture.
  5. Bake for 25-30 minutes until bubbly and golden brown.
  6. Allow to cool for a few minutes before serving.
