Method
 

Step-by-Step Instructions
  1. Preheat the oven to 200°C (400°F). Halve the ripe tomatoes and place them in a baking dish with the garlic. Drizzle with olive oil, and season with salt and pepper.
  2. Roast the tomatoes and garlic for about 20 minutes until they blister. Cover with foil and roast for another 10 minutes until the garlic is tender.
  3. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Reserve 240ml of starchy pasta water before draining.
  4. Blend the roasted tomatoes and garlic with fresh basil and ricotta, adding 100ml of reserved pasta water until smooth.
  5. Combine the pasta with the sauce in a skillet over medium heat, adding reserved pasta water until achieving desired consistency.
  6. Adjust seasoning with salt, pepper, or chili flakes, and serve garnished with fresh basil and grated Parmesan.
