Preparation Steps
  1. Start by standing fresh corn cobs upright on a cutting board. Using a sharp knife, carefully slice each cob lengthwise into quarters, creating corn ribs.
  2. In a mixing bowl, combine room-temperature butter with garlic powder, lemon pepper, smoked salt, and taco seasoning. Stir until the spices are evenly distributed.
  3. Take each corn rib and generously spread the seasoned butter all over, ensuring complete coverage.
  4. Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.
  5. Carefully place the coated corn ribs into the preheated basket without overcrowding. Air fry them for approximately 10–12 minutes, flipping halfway through.
  6. While the corn cooks, mix mayonnaise with chopped roasted poblano in a small bowl.
  7. Once the corn ribs are crispy and hot, brush on the creamy mayonnaise and poblano mixture generously, then sprinkle with cotija cheese, cilantro, and Tajín before serving.
