Preparation Steps
- Start by standing fresh corn cobs upright on a cutting board. Using a sharp knife, carefully slice each cob lengthwise into quarters, creating corn ribs.
- In a mixing bowl, combine room-temperature butter with garlic powder, lemon pepper, smoked salt, and taco seasoning. Stir until the spices are evenly distributed.
- Take each corn rib and generously spread the seasoned butter all over, ensuring complete coverage.
- Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.
- Carefully place the coated corn ribs into the preheated basket without overcrowding. Air fry them for approximately 10–12 minutes, flipping halfway through.
- While the corn cooks, mix mayonnaise with chopped roasted poblano in a small bowl.
- Once the corn ribs are crispy and hot, brush on the creamy mayonnaise and poblano mixture generously, then sprinkle with cotija cheese, cilantro, and Tajín before serving.
